A raw, tasty completely natural slice, and really does hit the sweet spot. With a big hit of antioxidants, iron and magnesium from Cacao, and is a real energy boost, without having that sugar low. I would recommend storing it in the freezer so it’s not so easy to go back for more. This recipe is quick and easy and takes approximately 15 minutes to make. I have tried a few raw desserts, and this one is a definite favourite, as the peanut butter goes hand in hand with the chocolate. If you are into clean eating, raw, deep nutrition, plant-based eating or just a healthy alternative, this one is a hit! Makes approx 12 slices.
INGREDIENTS:
Chocolate Crust
- 3/4 cup ground almonds and macadamia nuts
- 2 tablespoons organic cacao powder
- 2 tablespoons of pure maple syrup
- 1 tablespoon of melted coconut oil
- pinch of Himalayan sea salt
Peanut Butter Filling
- 3/4 cup 100% smooth natural peanut butter
- 3 tablespoons of pure maple syrup
- 1 tablespoon melted coconut oil
- pinch of Himalayan sea salt
Chocolate Topping
- 1/3 cup organic cacao powder
- 1/4 cup melted coconut oil
- 3 tablespoons pure maple syrup
INSTRUCTIONS:
- Line a slice tin with non-stick baking paper. In a mixing bowl, add all of the crust ingredients until well combined, then press into the bottom of a loaf pan. Put in freezer to set.
- Add the filling ingredients to the bowl and mix well. Remove the crust from the freezer and pour the filling over the top, level it out and put the tin back into the freezer.
- Rinse mixing bowl to make the topping. Combine topping ingredients, making sure to remove any clumps. Once the chocolate mixture is smooth, pour it over the peanut butter layer and put it back into the freezer for a couple of hours.
- When the slice is firm, remove it by holding onto the baking paper and slice it into pieces. Can be stored in the refrigerator for 2 weeks or in the freezer for a month. NB: when the weather is warm the slice will melt, so keep it cool.
